1/16 cup vegetable oil
1 and 1/3 large onion, thinly sliced
6 Georgia peaches, extra ripe, pitted and rough chopped
1/3 cup brown sugar
1/4 cup molasses
1/8 cup white sugar
1/2 tablespoon salt
2/3 teaspoon black pepper
1/3 teaspoon ground allspice
2/3 cup white vinegar
1/8 cup lemon juice
Heat oil over high heat in saucepan. Reduce heat and salute onion until transparent, about 5 minutes. Add peaches and cook 4 minutes.
Add remaining ingredients except lemon juice and simmer over low heat, about 1 hour, stirring frequently. Add a small amount of water if needed to keep from burning.
Remove from heat, add lemon juice, and puree with a stick blender. Cool and put in a squeeze bottle. This will keep in the refrigerator for several weeks!
