Apple Butter

Make this easy slow cooker butter on a cold fall day at home! Use a mix of apple varieties or apples and pears for a twist. Spread on toast, potato pancakes or use in baking. A cute jar of homemade apple butter makes a great gift, too!

Ingredients

  • 12-15 Honeycrisp apples, peeled and sliced
  • 1 c coconut sugar (or ¾ c white sugar)
  • 1 c packed brown sugar
  • 1 T cinnamon
  • ½ t nutmeg 
  • ½ t ground clove
  • ½ t salt
  • 2 t lemon juice
  • 2 t vanilla extract

Instructions

  1. Add all ingredients except the lemon juice and vanilla extract to the slow cooker. Set for 10 hours on low heat. Stir every couple of hours as the apples soften and break down. After 10 hours, remove the lid and carefully use an immersion blender to blend into a smooth butter consistency.
  2. Stir in the lemon juice and vanilla extract. Leave the lid off and let the apple butter cool down before spooning into clean and dry containers with lids (our batch made 3 – 12 oz jars) and store in the fridge for 2-3 weeks.
