Blueberry Jam Chia Pudding

This easy healthy snack features our delicious blueberries from Walker Farms in Michigan available every summer. ๐Ÿซ

Ingredients

  • 1/2 cup milk of choice
  • 2 Tablespoons chia seeds
  • 1/2 Teaspoon vanilla extract
  • 1-2 Teaspoons sweetener of choice
  • 1/2 Cup blueberries (fresh or frozen)
  • 1/2 Teaspoon Lemon juice
  • Pinch of salt

Instructions

  1. Add milk, chia seeds, vanilla, and sweetener to a small jar. Mix well and let sit for 15 min.
  2. Meanwhile, make blueberry jam. Combine blueberries, lemon juice, and salt in a small saucepan over medium heat. Stir and mash blueberries until they have broken down and thickened slightly 10-15 min. Remove from saucepan and let cool completely.
  3. Give chia pudding another mix to break up any seeds that have stuck together.
  4. Once the blueberry jam has cooled, add it to the top of the chia pudding. Enjoy right away or store in an airtight container in the fridge for up to 4 days. This can also be stored in the freezer for several weeks.

Pro Tip: This recipe can easily be doubled or tripled. Store the extras in the freezer for an easy healthy snack!
