Chicken with Sautรฉed Pears

This recipe features our delicious pears from Kiyokawa Orchards in Oregon available every fall. ๐Ÿ

Ingredients

  • 1 large chicken breast sliced in half
  • 1 pear sliced into 3/4 inch wedges, core removed
  • Vegetable oil
  • Salt and pepper
  • 3/4 cup chicken broth
  • 1 Teaspoon sugar
  • 1 Tablespoon Balsamic vinegar
  • 1 Tablespoon butter
  • Crumbled cheese (I used cotija)

Instructions

  1. Slice the chicken into two pieces and season with salt and pepper.
  2. Add pear wedges to small bowl and sprinkle evenly with sugar, salt and pepper. Set aside.
  3. Heat 2 teaspoons of oil in a 10 inch skillet. Add chicken to skillet and sautรฉ on both sides until the internal temperature reaches 165ยฐ, 5-8 minutes. Remove from skillet.
  4. Add 1 teaspoon oil to now-empty skillet. Add pears and cook 1-2 minutes on each side until well browned.
  5. Add chicken broth to skillet and continue to cook for 5 more minutes until it has thickened. Remove pears.
  6. Off heat, whisk in balsamic and butter.
  7. Add chicken to plate, top with pears, sauce and crumbled cheese. Enjoy!
