Chocolate Covered Strawberries

This recipe features our Michigan strawberries from Walker Farms available every spring.

Ingredients

  • 2 pints strawberries, stem on
  • 8 ounces bittersweet chocolate
  • 4 ounces bar white chocolate
  • 1 tablespoon vegetable oil (optional)

Instructions

  1. Rinse and dry strawberries.
  2. Chop both chocolates and place in separate microwave safe bowls.
  3. Microwave bittersweet chocolate 2 to 3 minutes, stopping each minute to stir until chocolate is smooth.
  4. Line baking sheet with parchment paper.
  5. Holding strawberries by the stem, dip into melted chocolate as far to the top as possible, let excess chocolate drip off, and place on baking sheet.
  6. Refrigerate strawberries for 30 minutes until chocolate has hardened.
  7. Microwave white chocolate 1 to 3 minutes, stopping each minute to stir until chocolate is smooth. If the white chocolate is too thick, add vegetable oil a little at a time until the proper consistency is reached.
  8. Remove hardened chocolate covered strawberries from refrigerator.
  9. Using a fork, dip the fork into the white chocolate, drizzle the chocolate covered strawberries with the white chocolate in a back-and-forth motion. You can also cut the tip of a plastic bag to drizzle the white chocolate.
  10. Place strawberries back into the refrigerator until chocolates have set, about 15 minutes.
  11. Best served same day but you can refrigerate for up to 2 days.
