Peach Farro Salad

This recipe features our fresh Georgia peaches from Pearson Farm available every summer! 🍑

Ingredients

  • 1 ½ cups uncooked farro
  • 2 ripe peaches, sliced
  • ½ cup thinly sliced red onion
  • 5-6 fresh basil leaves, chopped
  • ¼ cup toasted walnuts
  • 2 ounces creamy goat cheese, crumbled

For Dressing

  • ¼ cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Cook farro according to package directions. Drain and rinse with cool water. Transfer to a bowl and chill for 30 minutes in refrigerator.
  2. Add peaches, red onion and basil to bowl with farro.
  3. Stir together ingredients for dressing and pour over salad. Top with toasted walnuts and goat cheese. Serve right away.
