Spiced Pear Compote

This recipe from @JennaFreshAndFit features our Oregon pears from Kiyokawa Family Orchards available every October. 🍐


6 ripe pears, (mixed variety)

4 tbsp unsalted butter 

1 tbsp fresh lemon juice 

1/2 tsp pure vanilla bean paste or extract 

1/3 cup light brown sugar, packed 

1 tsp cinnamon 

1/2 tsp ground ginger

1/4 tsp ground cardamom 

1/4 tsp sea salt 

1/8 tsp nutmeg 

  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 2 tsp vanilla bean paste
  • 1 tbsp lemon juice


  • 1 egg white
  • 1 tbsp water
  • 1 tbsp Demerara sugar
  • Vanilla ice cream for serving


  1. Peel and core pears. Slice pears ¼ – ½ inch thick. 
  2. Melt butter in the bottom of a medium pot. Add pears, lemon juice, vanilla bean, brown sugar and spices to the pot. Stir gently to coat pears. 
  3. Continue to cook, stirring regularly for 10-15 minutes, until liquid thickens and pears are soft. Cool mixture until warm. Serve or store in an airtight jar in refrigerator.
